Lentils with Romanesco

  • 1 cup lentils type pardinas (green and flat)
  • 5 cup water
  • 2 cloves of peeled garlic
  • 1/2 onion
  • 1 carrot medium size (if they are small, use 2) washed, peeled and cut into slices or cubes
  • 1/2 romanesco- the flowers
  • 1 cup peeled peas
  • 8 asparagus (more or less) - cutting the bottom hard and then chopping as in the photo
  • 1 splash of extra virgin olive oil
  • 1 pinch of sea salt
  • 2 bay leaves

Roasted carrot with miso and cilantro vinaigrette

  • 5-6 carrots (if they are eco you do not need to peel them, but wash them very well) cut in half, leaving a little of the tails

 

THE VINAGRETA

 

  • 1 teaspoon miso pasta
  • 1 splash of extra virgin olive oil
  • 1 teaspoon honey
  • 1/2 lemon (juice + zest)
  • a bit of grated ginger
  • 1/2 teaspoon chilli flakes (optional)
  • g some sprigs of fresh thyme

 

THE TOPPING

  • 1 garlic clove finely cut

  • 1 1/2 cup white quinoa (previously washed)
